What are Hogget and Mutton?
- Hogget is a word used to describe a lamb in its second year at pasture and is aged between one and two years old. The extra year at pasture gives the Hogget its fuller and richer flavour.
- Mutton is the next stage of maturity and is at least 2 years old and can be up to 6 or 7 years old. This is what makes Mutton so full of flavour! Mutton is perfect for long slow cooking. Mutton is almost a forgotten meat and here at Primal Grazing with your help, we are looking to change that!
When pasture-raised and finished, Hogget and Mutton are highly nutritious, with high levels of Omega 3, fatty acids and many other essential vitamins and minerals including Zinc, Selenium, B12 and Iron,making it leaner with less saturated fats than indoor and grain-fed lambs. Hogget and Mutton are a great source of high-quality protein.
