Lamb - Hogget and Mutton

What are Hogget and Mutton?

  • Hogget is a word used to describe a lamb in its second year at pasture and is aged between one and two years old. The extra year at pasture gives the Hogget its fuller and richer flavour.
  • Mutton is the next stage of maturity and is at least 2 years old and can be up to 6 or 7 years old. This is what makes Mutton so full of flavour! Mutton is perfect for long slow cooking. Mutton is almost a forgotten meat and here at Primal Grazing with your help, we are looking to change that!
